Salt Bae and His Knife

Nusret Gökçe or “Salt Bae” sent the internet into a frenzy in early 2017 with his ever so erotic way he handles, cuts and salts his beef. Nusret Gökçe, is a chef and restaurant co-owner of a chain of Turkish Steak houses called Nusr-Et. He was given the nickname “Salt Bae” because of his flashy salting skills and an almost romantic appreciation for a hefty slice of meat. The talented chef cuts through his beef with ease using a 10″ breaking knife. While everyone is talking about his chiseled good looks, viral fame and his delicious cuts of beef; we want to focus on the knife and why it smoothly cuts through beef.

Breaking Knives:

While we mentioned the breaking knife in a previous blog about Butcher Knives, we didn’t fully dive into the what the strong, rigid curved blade is used for. The knife is used to “break” through skin, light cartilage, and small bones. It is also pretty good at slicing and carving fat (As we have seen Mr. Gökçe do multiple times through his videos). The handle of the knife above is Polypropylene (Poly), commonly known as plastic and is widely used on good quality stamped knives. Breaking Knives costs can vary depending on the brand while maintaining the same look though out each one, but the main difference in each knife will be quality. To slice through meat like the “Salt Bae” the steel of your knife must be high quality. To obtain high quality steel on a knife, then specific formulas need to be used. The formula used for all CCI knives is X50CrMoV15. The chart below will break down what each part of the formula means.

X High-quality steel Stainless steel: The basic material for our knives.
50 Carbon content At 0.5%; the carbon content is important for the hardness of the blades and therefore the sharpness of the knives.
Cr Chromium The additional alloy ensures particularly high stain-resistant qualities for the finished knives.
Mo Molybdenum An alloy element, which enhances the hardness and corrosion resistance of our knives.
V Vanadium Increases hardness and durability so that the blades do not wear down as much.
15 Chromium content At 15%
